Why Juice?

Drinking the freshly-extracted juices of vegetables is the fastest way to obtain the nutrients necessary to restore the human body to health.  Cooking destroys about 83 percent of vitamin content, kills all enzymes, de-natures protein and turns organic minerals into an inorganic form that is not usable by our bodies.  So, live, raw food has a tremendous nutritional superiority over dead, cooked food.  And likewise, it can be shown that there is an additional nutritional advantage in drinking the freshly extracted juice of raw vegetables.

The most abundant source of nutrients that can be used by our bodies is from raw vegetables.  But eating these raw vegetables is not the best way of obtaining this nutrition.  The advantage in juicing  raw vegetables is that when the juice is separated from the fiber, the great majority of nutrients stay in the juice.  Because the fiber has been removed, these fresh, living nutrients in the juice can get into the bloodstream and to the cellular level in minutes, without the time-consuming and energy-depleting process of digestion.

"Juice your vegetables and eat your fruits."

Although separating juice from the fiber helps us to obtain the nutrients more efficiently, our body does need fiber.  In the colon, fiber works as an intestinal broom to help move waste out of our body.  If we don't eliminate waste quickly and efficiently, this fecal matter putrefies and becomes a toxic waste that pollutes our entire body.  So we do need to eat raw fruits and vegetables for fiber, but for maximum nutrition, the rule is, "Juice your vegetables and eat your fruit."
